Vegan comfort food! Mac and “cheese.” Creamy and savory pasta! Yes, please! Dairy free, nut free, fake cheese free! Recipe below 👇🏽 Ingredients: * 1 teaspoon olive oil * 1 medium yellow onion (peeled and chopped) * 6 garlic cloves (peeled and minced) * 3 small yellow potatoes (peeled and chopped) * 1 medium sweet potato (peeled and chopped) * 2 medium carrots (peeled and chopped) * 1 cup of retained water from boiling pot of vegetables * 2 cups unsweetened non-dairy milk * 1/2 cup nutritional yeast * 3 tablespoons olive oil * 1 tablespoon lemon juice * 1 teaspoon salt * 1 teaspoon onion powder * 1 teaspoon garlic powder * 1/2 teaspoon black pepper * 1/2 teaspoon dried thyme * 2 teaspoons smoked paprika * 1 tablespoon cornstarch * 16 oz of your favorite pasta Instructions: * In a non stick pan heat 1 teaspoon of olive oil. Add the onions and cook about 6 minutes until translucent. Add garlic and cook another 2 minutes until fragrant. Add to large food processor. * Add the potatoes and carrots to a large pot of boiling SALTED water. Boil for about 20 minutes, or until fork tender. * While the vegetables are boiling, add all the other ingredients to the food processor and cook your pasta according to package instructions. * When vegetables are fork tender retain a cup of water from the boiling vegetable pot. Drain the potatoes and carrots then add directly to the blender with the other ingredients. VEGAN GLUTEN-FREE ROTI I was actually craving roti already in Suriname but since I had to leave the country earlier, I didn’t go to the delicious roti joint ‘Chris rotishop’ in Suriname that is always crowded. So I took my roti cravings in my dreams since I’m back 😏 and decided to make the flatbread again after a long time. Roti, what means bread was actually our bread when we grew up and grandma always made sure she made fresh ones every day. Just like the bread we normally eat, we ate this type of flatbread with different sorts of spread. Here I eat the flatbread with green beans, eggplant, oxheart cabbage and like the traditional Surinamese way, some curry. In my blog is a recipe how I make the flatbread for years, due to the gluten in the traditional way.
