Heat the beef stock in the crock pot
Rough chop carrots, onions, and celery. Quarter the cremini mushrooms. Chop the swiss chard. Pick whole leaves of basil and oregano. Dice large potatoes
Season the osso buco with olive oil, kosher salt and coarse black pepper.
Place the osso buco on a hot, well seasoned grill
Grill the osso buco until well charred
Add rough chopped garlic to the beef broth. Add grilled osso buco and three slices of chopped bacon. Slow braise for 30 minutes.
Add celery, onions, and carrots. Slow braise for 1 hour and 30 minutes.
Remove the osso buco from the broth. Set aside to cool to room temperature.
Add potatoes, basil, and oregano. Slow cook for another 35 minutes.
Large dice the osso bucco.
Add mushrooms and diced osso bucco. Slow braise for another 35 to 45 minutes.
Serve the soup over creamy polenta. Garnish with arugula and garlic bread.
