today’s lunch was 🤤 last night I made #vegetarian fried rice and it was so easy + tasted just like the Trader Joe’s frozen fried rice (except this recipe is way cleaner obvi)!! I put some of the leftovers on top of a bed of romaine to make it more like a salad and then drizzled some siracha + black sesame seeds on top!!! V fried rice: * scramble some tofu with a fork to make it look like scrambled eggs (or sub eggs if that’s ur preference) and cook it for a few mins in a lil bit of turmeric + onion salt * add in any veggies ya want! I did broccoli, corn, peas and edamame! Let it cook till the veggies aren’t frozen anymore. * Now add rice! I made homemade jasmine rice on the stove and added in as much as I wanted. * Add the *sauce and give it a good stir. THIS IS KEY: flatten the mixture down and put it on high heat to crisp up the bottom. This is what makes it FRIED and crispy and just like so. good.

Hello, what’s for lunch today? I made some cheese on toast with some beans and a creamy parsley chutney. I am trying to be a lot more adventurous with my food while also trying to use up all the things I have in my pantry. Unfortunately my flour is almost all gone so I need to slow down on the bread baking but I am rediscovering my vital wheat gluten and the soy beans I had stuck far away in my cardboard. I want to know all the new things you guys are making during this time of social isolation, so indulge me in the comments

Mein Herz schlägt höher, als ich gestern früh im REWE stehe - ist das wirklich...? Ich traue meine Augen nicht, tatsächlich - eine einsame Packung Weizenvollkornmehl. Schwups in meine in Einkaufswagen 🥳 Das will gefeiert werden. Wie du gestern in meiner Story gesehen hast, gab es eine Frühlings-Flammkuchen-Party 🙆‍♀️ Nachdem mich gestern so viele Bitten um das Rezept erreicht haben - Here it is: Für den Teig: 500g Vollkornweizenmehl, 1/2 Tütchen Hefe, 350 ml lauwarmes Wasser, eine Prise Zucker, 1/2 TL Salz und 1 EL Olivenöl. Mehl in eine große Schüssel geben, in die Mitte eine Mulde buddeln. Wasser, Hefe, Zucker in diese Mulde geben und mit ein wenig vom Rand vermischen. 5 Minuten so stehen lassen. Dann das restliche Mehl mit der Flüssigkeit vermengen, Salz und Öl hinzu und 10 Minuten gut kneten. 1 Stunde abgedeckt an einem warmen Ort gehen lassen bis sich der Teig in seiner Größe verdoppelt hat. Backofen vorheizen auf 200 Umluft. Dann nochmal gut durchkneten. In 4 Kugeln teilen und jeweils auf einer mit Mehl ausgestreuten glatten Fläche ausrollen und wenn er schön dünn ist auf ein Backblech legen. Belag: (Veganer) Frischkäse mit etwas (Soja)joghurt verdünnen, so dass es sich gut auf dem Boden verteilen lässt. Ein wenig salzen und pfeffern. Spargel halbieren und darauf arrangieren, aufgetaute TK Erbsen darüber streuen, ggfs. noch ein wenig Feta - oder Feto 🤷‍♀️ Für 15 Minuten etwa goldbraun backen. Wenn du sie aus dem Ofen geholt hast gibst du etwas Rucola, Petersilie, (rosa) Pfeffer und ggfs. Minze dazu.
